THE CABIRIA RESTAURANT
The Cabiria, the gourmet setting of the Rome Marriott Grand Hotel Flora, is the
realm of chef Luigi Sorrentino. The culinary journey starts in Naples but then
moves on to the other Italian regions according to the season. Is it the
right time for aubergines? So then it’s time for the special “paccheri” pasta
from Gragnano served with aubergines sliced into thin strips and fried until they
are golden, “pachino” tomatoes dried, salted “baccalà” cod and Gaeta olives. The
inspiration comes from the season and from the colours of the day. A rainy or
grey day means more color on the plate. And the Gulf of Naples shows its influence
even on the shape of the food. The “Faraglione” is a flan made with almonds, chocolate
vanilla ice-cream and nutty “gianduia” sitting on a kiwi sauce, and always makes
guests think of Capri’s famous Faraglione rock
